not-key lime pie

So oops. I was planning on making some tasty key lime pie the other night for dessert, but apparently key limes aren't quite in season yet. I probably should've checked that out before buying everything else to make the pie, but I improvised, and thus the not-key lime pie was born. (Obviously I'm not the first person to do this, but I'd like to think I'm a bit of a pioneer.) I used regular limes instead, and added a little bit of lemon juice as well, because apparently that's the best way to fake key lime. The result? Awesomeness.

spaghetti & meatballs cupcakes

That's right! Combining oh-so-delicious pasta with oh-so-delicious desserts? Perfect! These were a special treat for everyone at the restaurant I work (well, worked) at, since I'm leaving them for the lure of the big city. I found the idea here, and couldn't wait for a reason to make them!

pavlova

This one is a special request from the boy, a food which he claims to be from the motherland - well, his motherland, Australia, although the origins of this dessert are under a bit of dispute. Pavlova! I had actually never heard of it before meeting him, so it was a totally new thing for me to be making, but I was quite pleased with how it turned out. (His verdict? Too much whipped cream, but he puts ice cream on pumpkin pie instead of whipped cream, so I wouldn't really count that as criticism.) I think the next time I make it, I'll do a few individual pavolvas (pavlovae? pavloves?), so that we don't have to eat one giant one all by ourselves. Tasty stuff though! I snagged this particular recipe from over here, but there are loads of good ones I found online - I just liked the photos from this particular one. It was quick and painless, and best of all - delicious!

canuck cupcakes

These boys deserve a little love! They played hard last night, and came back from a rough couple of games, so I'm excited to post these cupcakes as my little tribute to our boys!

zucchini carrot muffins

Okay, first off I need to say that the banana bread recipe from last week? My mom did a fantastic job of adapting that one from some random cookbook of hers, and that's the recipe I used. Honestly, I meant to put it in that one, but forgot, so this will have to do!

And now that my mom's not angry with me, here's a spiel about this week's recipe - zucchini carrot muffins. I remember the first time I had zucchini (at least, the first time I remember eating it), it was in chocolate zucchini loaf, and I honestly don't think I could taste the vegetable (fruit?) at all. This is kind of the same deal. I'd stumbled across the recipe (which you can find here at Multiply Delicious, although I've modified it a bit), so when the boy asked if I could make some muffins for him to have for breakfast and take to work, I was all for it.

Until I realised how long it would take me to grate enough carrot and zucchini for a triple batch. (That's right, I didn't learn my triple-batch lesson from last weekend!) But I powered through, and I (we) was (were) definitely rewarded with these little guys! So tasty. And now, it's your turn!
