banana bread

But not just banana bread - also, banana muffins! I tragically only have two loaf pans, but decided to make a triple batch (more on that later!), so I went with (invented) the ever-so-portable muffin version of my favourite banana bread recipe.


We had a ludicrous amount of bananas in the freezer - the boy likes to take them to work and then not eat them, and when they get all bruisy I pop them in the freezer to use in baking. Well, obviously I hadn't made anything with bananas in a while, as we had 9 of them in there! I figured it was time to clear them out since they were starting to take over, and had enough for a triple batch of banana bread. I really took my mixer to the limit on this one, guys. Seriously, I probably wouldn't do more than a double. I've got the Professional HD  or whatever it's called, by KitchenAid, and I was starting to worry for its poor little motor. Lesson of the day: don't try to use all the bananas in one go. But it all worked out in the end, and we had loads of delicious banana bread (and banana bread muffins) to feast on...and now you can too!

apple pie cupcakes

Guess what guys? These aren't cookies! I thought I'd branch out a bit and make some cupcakes...apple pie cupcakes! The recipe's one I found ages ago on Annie's Eats, and have been meaning to try out since then. And I'm sad, because I waited so long for such tasty cupcakes! (I cut the recipe in half and only made a dozen, because really? What are the boy and I to do with two dozen cupcakes?) So, without further adieu, let's get this show on the road!

sugar cookies and royal icing

Okay, I promise this is the last post about cookies for a while! But these were pretty fun to make, and DELICIOUS, even if they look like they were decorated by a toddler with a serious lack of motor skills. Everything I'm about to write about comes straight from Annie's Eats: the cookie recipe, the royal icing recipe, and the ever-so-helpful guide to using royal icing. How obvious is it that I love that blog? Hopefully very obvious, because it's awesome. Anyway, enough gushing, let's get down to cookies!

chewy lemon sugar cookies

See what I mean about being in cookie-mode lately? They're all I want to bake! I'll try to change things up for you guys next weekend though. But it's not all bad, cookie-mode, because these ones are pretty tasty. I got the recipe from Design*Sponge, but it's actually from the girls who run this site.


They combine a whole bunch of my favourite things - they've got a lemony flavour, which is a bit unique; they're sugar cookies, which are always a safe bet; and they're chewy, which is a big selling point for me when it comes to cookies. I really don't like to break my teeth on a snack. So get excited, and then head for the kitchen to whip up a batch for yourself!

almond mocha cookies

I think I must be in cookie mode, because that's really all I want to bake (and eat) lately. These puppies come from one of my favourite cookbooks, Better Homes and Gardens' "The Ultimate Cookie Book". (They're on page 54, for those of you playing along at home.)  I have never had these cookies not turn out, they're delicious and dead easy to make. Plus? They're a teensy bit caffeinated. Perfect!
