cupcake roundup!


Wow, so much for attempting a post every weekend...two weeks in, and I missed the third! Although I've got a legit excuse for this one - poor little Gadget was sick last weekend. I had to play kitty-cat doctor, and run around on cleanup duty for a day or two. But, he's all better now and I'm back in action.

Well, sort of back in action. More like back in a walk down memory lane. Cupcakes are my absolute favourite thing to bake and have fun with, so this is basically me gushing about the best, most delicious, and most fun ones I've made in the last year or so. I'll link recipes when they're online, or suggest others if I got lazy and went with a mix. (Yep, it pains me to say it, but I've broken down and used box-cupcakes in my time. Tragic - but SO handy!)

anzac biccies!

This one's got to be dedicated to the boy, I think, since he was the one that got me to make them for the first time. He mentioned them, I randomly had the ingredients, and the rest is history. Bonus: I didn't even have to wait for the butter to soften! And these cookies? Are deeeeelicious. Plus, they seem like they would be healthy. Okay, not in the strictest sense of the word, but they're probably better than the last ones I posted!



I honestly just grabbed the first recipe I saw from a quick google session, but they're more or less all the same. So here's "my" version. It's conveniently translated from Australian (aka actually using metric), so you don't have to bother with figuring it out. I've also included the original stuff though, in case that's just how you roll, but I've drawn the line at calling baking soda "bicarbonate of soda" - seriously?

salted double chocolate chunk cookies

The very first post...kind of a big deal! Of course, I could be all nonchalant, and play it off like it's no big deal, but I've spent at least a week agonizing over what to write for this first one, so that's a bit tough.

These cookies? Kind of the opposite. They look like they're a big deal, pretty fancy, but they're not at all. I got the recipe from Annie's Eats, which I absolutely adore! It's dead easy to follow, but the cookies look (and taste) gorgeous. Plus, they impress the heck out of everyone!

Salted Double Chocolate Chunk Cookies

Makes about 2 dozen
Ingredients:
8 oz. semisweet chocolate, coarsely chopped*
4 tbsp. unsalted butter
2/3 cup all-purpose flour
½ tsp. baking powder
¾ tsp. sea salt, plus more for sprinkling
2 large eggs, at room temperature
¾ cup packed light brown sugar
1 tsp. vanilla extract
12 oz. semisweet chocolate, coarsely chopped*
